Scone
  • 3 1/2 cups (445 grams) all-purpose flour
  • 1 1/2 cups (170g) butter
  • 1 TSP fine sea salt
  • 1 TBSP baking powder
  • 1/2 TSP baking soda
  • 1 CUP (237 ml) buttermilk
  • 1 LARGE egg
  • 1 Batch cinnamon sugar chips
Cinnamon sugar chips
  • 2/3 CUP sugar
  • 3TBSP ground cinnamon
  • 2 TBSP light corn syup
  • 1/4 TSP vanilla extract
  • Mix and bake in a flat sheet for ~15 min at 350-400F
Scone wash
  • 2 TBSP heavy cream

  1. Set oven to 400F
  1. Mix buttermilk + egg and set aside (in fridge if needed to cool)
  1. Sift flour, baking soda, baking powder and salt
  1. Cut in butter (Food processor, hand cutter or hand mixer)
  1. Pour in wet mixture and toss lightly
  1. Fold in cinnamon chips
  1. Place mixture on floured surface into rectangle. Split rectangle into three equal parts, stack them on each other and press (lamination step). Do this twice
  1. Cut into desired shape (triangles get the most flake effect)
  1. Brush with cream, and crack fresh pepper on top
  1. Bake 7-15 MIN

  1. Whip butter + add flaky salt
