Ingredients
Scone
- 3 1/2 cups (445 grams) all-purpose flour
- 1 1/2 cups (170g) butter
- 1 TSP fine sea salt
- 1 TBSP baking powder
- 1/2 TSP baking soda
- 1 CUP (237 ml) buttermilk
- 1 LARGE egg
- 1 CUP grated aged mimolette cheese (cheapest from Costco, if you can find it)
- 4 TBSP (heaping) fresh chopped sage
Scone wash
- 2 TBSP heavy cream
- Fresh cracked pepper
Whipped butter
- 1/2 CUP salted butter
- 2 TBSP honey
- 1-2 TSP red miso paste
- Flaky salt
Instructions
Scones
- Set oven to 400F
- Mix buttermilk + egg and set aside (in fridge if needed to cool)
- Sift flour, baking soda, baking powder and salt
- Cut in butter (Food processor, hand cutter or hand mixer)
- Pour in wet mixture and toss lightly
- Fold in cheese and sage
- Place mixture on floured surface into rectangle. Split rectangle into three equal parts, stack them on each other and press (lamination step). Do this twice
- Cut into desired shape (triangles get the most flake effect)
- Brush with cream, and crack fresh pepper on top
- Bake 7-15 MIN
Butter
- Whip butter, honey and miso
- Place on a pretty plate + add flakey sea salt on top
