Ingredients
Crust
- 1 CUP butter, cubed and cold
- 2 CUPS pastry flour (or all purpose)
- 1/2 CUP powdered sugar
Lemon curd
- ~3 lemons, zested and squeezed
- 4 eggs
- 2 CUPS caster white sugar
- 3 TBSP flour
- 1 TSP baking powder
- 1/4 TSP salt
Top
- 1/2 CUP powdered sugar
Instructions
Crust
- Sift flour and powdered sugar into bowl
- Toss cubed butter in
- Using a pastry cutter or hand mixer, cut butter into flour mixture until itβs a wet sand-like quality
Lemon curd
- Zest and juice 3 lemons
- Use your hands to rub zest into the 2 CUPS of sugar
- Whisk together sugar, lemon juice, eggs
- Sift in flour, baking soda and Salt
- Whisk + taste to make sure thereβs enough lemon
Baking
- Set oven to 350F
- Press crust mixture into bottom of greased 9x13 pan
- Bake crust for 20min
- While crust is baking, make lemon curd
- Take crust out, and immediately pour on lemon curd (make sure to mix again before pouring in)
- Bake for another 20 min, until barely jiggly
- Top immediately with sifted powder sugar
