Ingredients
Cooking sauce
- 1 TBSP dark soy
- 1 TBSP light soy
- 1 TBSP mirin
- 1 TSP toasted sesame oil
- Water if too strong
Dressing sauce
- 2 TBSP sesame paste (or tahini)
- 2 TBSP light soy
- 2 TBSP dark soy
- 1/2 TSP Chinese black vinegar (or rice vinegar)
- 1 TSP toasted sesame oil
- 2 TSP brown sugar
- 1 TSP mushroom bouillon (optional)
- Salt to taste
- a bit of water to smooth out to right consistency
Mixings
- Cooked buckwheat soba noodles (al dente)
- Thinly sliced bell pepper, cucumber, carrots
- Arugula (2-3 hand-fulls)
- Pan fried eggplant
- Ground turkey (or pork)

Directions
- Pan fry eggplant and ground turkey with salt, pepper and garlic powder - throw in cooking sauce at the end to caramelize (can do the eggplant and turkey separately for better results)
- Lightly cook soba
- Mix in eggplant, turkey, thinly sliced veggies, arugula
- Top with cold sesame dressing and stir
