Instructions
- Saute a yellow onion
- Add 2 fresh chopped tomatoes
- Stir in 2 tbsp tomato paste
- Salt
- Add in white beans (2 cans)
- Take some of that mix and add it to a blender. Add half a jar of sundried tomatoes, 1 whole roasted bell pepper salt and some sugar and blend
- Add back to pot
- Salt
- Chop up some more roasted bell pepper and sun dried tomatoes and add to the mix
- Add in 1-2 tbsp apricot jam (or sugar)
- Maybe some champagne vinegar if needed
- Make jammy eggs and arugula salad with chopped walnuts, basil and parsley
