Ingredients
- 4oz mahi mahi
- 1tsp olive oil
- 1tsp soy sauce
- 1 knob ginger
- 1-2 gloves garlic
- 2 cups spinach
- 100g white rice
- 1-2 cups chicken stock
Instructions
- Preheat oven to 350F
- Mix olive oil and soy sauce
- Baste mixture onto mahi mahi (one surface)
- Bake the fish at 350F for 10-12 min, until flakey
- Meanwhile, lightly saute /steam spinach with garlic and ginger, can use some chicken broth to steam
- Plate rice, spinach, fish, pour over warmed chicken stock (with ginger if you have time)
- Top with extra soy sauce / chili if you want / scallions if you have would be good
