  1. 4oz mahi mahi
  1. 1tsp olive oil
  1. 1tsp soy sauce
  1. 1 knob ginger
  1. 1-2 gloves garlic
  1. 2 cups spinach
  1. 100g white rice
  1. 1-2 cups chicken stock

  1. Preheat oven to 350F
  1. Mix olive oil and soy sauce
  1. Baste mixture onto mahi mahi (one surface)
  1. Bake the fish at 350F for 10-12 min, until flakey
  1. Meanwhile, lightly saute /steam spinach with garlic and ginger, can use some chicken broth to steam
  1. Plate rice, spinach, fish, pour over warmed chicken stock (with ginger if you have time)
  1. Top with extra soy sauce / chili if you want / scallions if you have would be good
