Healthy Peach Ice Cream (Ninja Creami)
Ingredients
  • 1 cup heavy whipping cream
  • 2 egg yolks
  • 1½–2 cups chopped fresh peaches (peeled if desired)
  • 1 tbsp honey
  • 1 tsp agave syrup (heaping)
  • 1 tsp fresh lemon juice
  • Small pinch of salt
  • 1¼ tsp vanilla extract
Instructions
  1. Make the Custard Base
      • In a small saucepan, heat the heavy cream over medium heat until just steaming (not boiling).
      • In a separate bowl, whisk the egg yolks.
      • Slowly pour a small amount of the warm cream into the yolks while whisking constantly to temper them.
      • Return the yolk-cream mixture to the saucepan and continue to heat gently, stirring constantly, until it reaches 170°F and thickens slightly.
      • Remove from heat and let cool slightly.
  1. Prepare the Peach Mixture
      • In a bowl, combine the chopped peaches, honey, agave, lemon juice, and a small pinch of salt.
      • Let the mixture sit for 10–15 minutes to macerate and draw out the juices.
  1. Combine and Blend
      • Add the slightly cooled custard base to the peach mixture.
      • Use an immersion blender (or regular blender) to blend until smooth.
      • Stir in the vanilla extract.
  1. Freeze
      • Pour the mixture into a Ninja Creami pint container and freeze for at least 24 hours.
  1. Churn
      • After freezing, run the Ninja Creami on the “Lite Ice Cream” or “Creamy” setting.
      • Re-spin if needed for a smoother consistency
