  1. Blend 8 eggs, 1 cup cottage cheese, pepper
  1. Stir fry 2/3 lb chicken sausage, 1 diced bell pepper and 4oz any mushroom of choice
  1. Mix egg mixture and meat mixture
  1. Fill in greased muffin tins till 3/4 full
  1. Crumble a bit of feta (2oz total) on each
  1. Bake at 300F for 25min (or till not jiggly and also not overcooked. They’ll puff up but watch them)
  1. Eat or freeze!
