Ingredients
- 1 CUPS washed black beans
- 2TBSP olive oil
- 1 medium onion
- 3 garlic cloves, minced
- 1 TBSP grated ginger
- 1 jalapeño
- 1 TSP cumin
- 1 TBSP paprika, chili, adobo chili
- 1 TBSP garlic powder
- 1 TSP smoked paprika
- 1 chipotle in adobo, chopped
- 1 TSP salt
Instructions
- Soak beans in water overnight
- Sauté onion, garlic and jalapeño in OO till onion is translucent
- Add in spices and loosen for 1 min
- Add chipoltles
- Drain and rinse soaked black beans then add
- Add 4 cups broth or water
- Slow cook for 6 hours
- Blend half the beans and mix back in - reduce water content by simmering for a bit if needed
