Instructions
Apples
- Prepare a springform pan by greasing with butter or oil + adding a base layer of parchment paper
- Peel one apple and slice small lengthwise slivers. Add in pretty circular pattern to bottom of baking dish (springform pan is optimal)
- Peel and dice ~3 medium-large apples
- Add apples, 2TBSP of sugar and a squeeze of lemon juice to pan
- Caramelize for 10-15 minutes, until soft and has a caramelized smell
- Add apples to blender. Blend till smooth and then leave to cool
Caramel [Skip this step if youβre making this dairy free]
- Add 1/2 cup sugar to pan, and stir on medium until a dark amber color
- Add 1/4 cup butter and 1/4 cup cream
- Whisk aggressively
- Add 1/2 TSP of salt
- Pour caramel over apples in prepared pan (try to get an even layer, but no pressure)
Cake batter
- Blend cooled apples as much as possible
- Add 8 eggs, 275g sugar, a squeeze of lemon juice and blend
- Add 325g almond flour and blend again
Compile and bake
- Preheat oven to 350F
- Pour batter over apples and caramel
- Sprinkle slivered almonds
- Bake for ~30-45 minutes (poke a stick in to see if it comes out clean at 30min)
Serving
- Serve with a sprinkle of icing sugar over top and some tea π
